At first, it was just for me.

VitaDry didn’t come out of a market study. It came out of a bag of spinach forgotten at the back of the fridge, and a question that kept coming back every week: why is it so hard to just eat fruit?

I bought fruit. I threw it away.

On Saturdays I shopped with the best intentions. Apples, bananas, berries, a bag of spinach. By Wednesday half of it was still sitting there. By Friday it went in the bin. I did that for years, feeling a little ashamed every time. It wasn’t that I didn’t care. It was that I left late in the morning, ate in front of a screen at lunch, and by evening couldn’t face getting out a blender I’d then have to wash.

What if the fruit came to me?

So I turned the problem around. If I couldn’t get to the fruit, then the fruit had to fit in a pocket, wait without spoiling, and be ready before I changed my mind. I started reading about cold drying, then started testing. There were plenty of bad versions, a few promising ones, and some very patient people around me who tasted all of it without always telling me what I wanted to hear.

We take out the water, nothing else.

Fruit is about 85 % water. That water is what makes it rot in three days. Freeze-drying means freezing it to −40 °C, then drawing the ice out under vacuum, without ever heating it. That’s the whole point: heat is what damages the taste and the vitamin C. The fruit keeps its colour, its smell and most of its nutrients. All that’s missing is the water, and you add that back when you drink it.

A label you can read all the way through.

Fruit, vegetables depending on the flavour, dates for sweetness, and chia protein in some recipes. That’s it. No flavourings, no colourings, no preservatives, nothing you’d have to look up. A 22 g stick works out at roughly one to two portions of fruit. I’d rather tell you that plainly than put a bigger number on the packaging.

VitaDry is a young Belgian brand, shipped from Brussels. Seven flavours for now: we’d rather release a few and keep working on them than line up twenty. The recipes have already changed several times, because people told us what wasn’t right. If you try them and something bothers you, write to us. That’s how we get better.
