Freeze-drying: how it works, and why it preserves vitamins

Freeze-drying in one sentence

We freeze the fruit, then turn its water directly from ice into vapour, under vacuum, without ever heating it. What remains is the fruit itself: its structure, colour, aromas and nutrients — minus the water.

Why cold changes everything

Water makes up 80 to 90 % of a fruit’s weight; it is what makes it perishable. The problem with traditional methods is heat: the most fragile nutrients — vitamin C, folate (B9), thiamine (B1) — degrade as soon as you heat them. By removing water cold and under vacuum, freeze-drying avoids precisely that destructive step.

Traditional thermal drying (60–80 °C for hours) can destroy a large share of vitamin C and polyphenols. Juice pasteurisation heats too. Freeze-drying is recognised by food-science research as the preservation method that best protects micronutrients, aromas and colour, with retention rates often above 90 %.

Another asset: structure. By subliming the ice, the process leaves the fruit as porous as a sponge. That’s why freeze-dried powder rehydrates in seconds in water or milk — where oven-dried fruit turns hard and compact.

A technology born of space and medicine

Scaled up in the 1960s, notably to feed NASA astronauts, freeze-drying is used today for vaccines, antibiotics and cultures — precisely because it preserves the most sensitive molecules. If we trust it with medicines, we can trust it with strawberries.
